My gang eats this as quickly as I bake it.
Usually make a double batch in the small
loaves and it makes about 10 to 12 loaves.
Freezes very well. While zucchini is available
in abundance right now, I go ahead and grate it
and freeze it in baggies (2 cups). This way I
have it ready to make bread or whatever.

1 cup chopped nuts (optional)
4 eggs
2 cups sugar
1 cup oil
3 1/2 cups flour
1 1/2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
3/4 tsp baking powder
2 cups grated zucchini (not peeled)
1 cup raisins
1 tsp vanilla

Beat eggs, gradually beat in sugar then oil.
Combine dry ingredients and all to first
mixture alternately with zucchini, then stir
in raisins, nuts and vanilla.

**NOTE: If zucchini is very watery, squeeze
water out before adding.

Greased, lightly floured pans, either 2 loaf
pans or 5 small pans. Bake at 350° for
45 minutes or when done (check with toothpick).

Let stand about ten minutes and then turn out
of pan to cool on rack.

Hope you enjoy it.
